How to Carve Your Thanksgiving Turkey

With Thanksgiving tomorrow, many of you are preparing to gather with family and friends for a delicious feast. Whether you're traveling to visit others or hosting Thanksgiving at your house, turkey is sure to be on the table. In today's blog, Your Lake Vacation offers several tips and tricks for when you're ready to carve that turkey.

Turkey Carving Tips

1. Let the Turkey Rest. Once the turkey is done cooking, you want to let it sit for at least 15 minutes before you start carving it. This allows time for the juices to redistribute and make the entire turkey more tender. You'll also be less likely to burn yourself by letting it cool a little before cutting it apart.

2. Place the Turkey on a Carving Board. One of the first mistakes that many people make is trying to carve the turkey in the pan that it was cooked in. To keep the turkey from sliding around and to keep the pan from getting in your way, take the turkey out and place it on a kitchen towel on a cutting board. 

3. Use a Knife and Some Tongs. Turkeys can be difficult to carve, so grab a trusty pair of tongs to use in conjunction with a large, sharp knife. The tongs will help you keep the turkey in place as you are cutting with the knife. You can also use a carving fork instead of tongs if you prefer. As for the knife, sharp 10-inch slicing knife would be a good choice, as a serrated blade will tear the meat.

4. Cut Across the Grain. For maximum tenderness, you want to cut the turkey across the grain. You also want to follow the shape of the muscle to avoid wasting any meat.

5 Pumpkin Carving Tips

One of the most popular Halloween traditions is pumpkin carving. While some people like to cut a simple jack-o-lantern face into their pumpkin, others carve elaborate designs into theirs. With Halloween just a few days away, we thought we would offer you a few pumpkin carving tips.

1. Choose the Perfect Pumpkin. 

You want to make sure your pumpkin is fresh. If you bought it at the beginning of the month and it has been sitting on your porch for awhile, it may not be the best pumpkin for carving. You also want to choose a pumpkin with no bruises, a sturdy stem and a flat bottom so it doesn't roll around. Pumpkins of lighter color have a softer flesh, making intricate designs easier to carve.

2. Cut the Top Off at an Angle. 

The first step in carving a pumpkin is cutting the top off so you can get all the pulp out of the inside. When you cut the top off, you'll want to cut it at an angle rather than straight up and down. This way the lid won't fall into the pumpkin when you replace it. For this step, a boning knife works best.

3. Remove All the Pulp. 

There's a lot of goop inside of a pumpkin, and before you start carving, you'll want to remove it all. While some of it will easily come out with your hand, you may want to purchase a special "claw" or an ice cream scoop to get the job done. You will get messy, so if you don't like touching the pulp, you may want to purchase some rubber gloves as well. You want to thin the wall of the pumpkin as much as you can so that it's easier to carve.

4. Start Carving Your Pumpkin. 

Depending on how fancy you want to get with your design, you may want to trace the design on the pumpkin before you get started cutting. The key to safe carving is to use a sharp knife. The sharper the knife, the less force you'll need to use and the less likely the knife is to slip. For increased stability, carve out the smallest details first, then work your way up to the larger cuts. It's also a good idea to leave the cut pieces in place until you are finished cutting all the lines.

5. Use Petroleum Jelly to Keep it Fresh. 

Pumpkins contain a lot of water and when you start cutting into them, they begin to lose that moisture. That's why they shrivel up after awhile. To keep your pumpkin fresh longer, spread petroleum jelly on the cut edges to seal in moisture. If your pumpkin still shrivels up a few days later, you can try to revive it by soaking it facedown in cold water for up to eight hours.

The largest unsanctioned boat race in the US is happening in just a few weeks! According to Powerboat Magazine, the Lake of the Ozarks Shootout is named one of the nation's eight "must-see" boating events. The event will bring the top races and off-shore power boats topping 244 MPH to the Lake! 2016 Shootout Events

The Lake of the Ozarks shootout is about more than just the boat races. It's a charity event that raises funds for eight Lake-area rescue teams and numerous other charitable organizations. Festivities take place all week long leading up to the event, and the activities keep growing each year.

The 8th Annual Shootout Benefit Golf Tournament 

Kick off the Shootout Festivities with the benefit golf tournament on Saturday, August 14. Registration and lunch are at noon, with a 1:00 shotgun start for the tournament. There will be an awards party immediately following.

3rd Annual Border Expressions Shootout Lil' Boat and Pontoon Poker Run 

Registration for the poker run will be from 8-10 am on Friday, August 19 at Captain Ron's. Following the all day poker run, there will be an awards party at Topsider at 6 pm.

7th Annual Mini Shootout 

The Mini Shootout will take place at the Springs at Ha Ha Tonka. Registration and the Meet & Greet will be at 5pm on Friday, August 19. Practice runs will start at 9 am and run until Noon on Saturday, August 20. The races will take place from 1-5 pm on Saturday and from 9 am - 4 pm on Sunday, August 21. There will be an awards ceremony immediately following the races on Sunday.

The Great Shootout Treasure Hunt at Captain Ron's 

Join locals and visitors alike at Captain Ron's for a social hour on Monday, August 22 from 5-6 pm. At 6 pm, they will explain the rules for the treasure hunt. The hunt will then take place from 6:10 - 7 pm. Check out and presentation of awards will immediately follow the hunt.

Shootout Volleyball Tournament 

On Tuesday, August 23, test your game of volleyball from Noon to 8 pm at Captain Ron's.

Shootout Hall of Fame Dinner and Induction at the Stables at Cannon Smoked Saloon 

Social Hour will take place from 6-7 pm on Tuesday, August 23. Dinner will be served at 7 pm, and the induction of the Shootout Hall of Fame Class of 2016 will start at 8:30 pm.

Shootout on the Strip Meet & Greet 

Meet the racers and their boats on Wednesday, August 24. Boats will line up on highway 242 from 2-3 pm, and the procession from there to Bagnell Dam will happen from 3-4 pm. The meet & greet will be open to the public from 5-10 pm.

Vendor Booth & Racer Villages Setup

On Wednesday, August 24, vendors will setup their booths from 8 am to 4 pm.

Free Parking Day at Scallywags RV Park & Buccaneer Bay Resort 

Vendor booth and racer village setup will continue from 8 am to Noon. Breakfast will be served at Captain Ron's from 8-11 am. Live entertainment by Sweet Trouble will be happening from 6-10 pm at Captain Ron's that night.

Make-A-Wish Powerboat Rides 

From noon to 4 pm racers will be giving boat rides to Make-A-Wish recipients off Dock 3 at Captain Ron's.

Shootout Auction and Poly Lift Poker Run Meet & Greet

You can register for the poker run from 4-9 pm on Thursday, August 25 at Performance Boat Center. At that time, you can also meet & greet racers. The auction will happen from 7-9 pm.

On Friday, August 26, things start heating up! Here's the schedule for the day:

• 7:30-10 AM: Poly Lift Poker Run Registration and Breakfast
• 8-11 AM: Breakfast at Captain Ron's

The Edge of Your Seat

While the topic of seating at your Lake of the Ozarks vacation rental may not be the most exciting topic to discuss, it certainly can play a major role in securing rentals for your property. This is one of those items that gets overlooked, especially in larger homes or condos, especially those owned by someone with a small family.

How Many People Does Your Home Sleep? 

This may seem like common sense to most people, but you should have dining seating and deck seating for the number of guests that your home or condo sleeps. For instance, if you have a two bedroom condo and it sleeps six guests, then you should have dining seating (including the breakfast bar) for a total of six guests. If you have a large home that sleeps 16, then you need dining seating for 16 guests.

Dining Room Seating 

You would not believe the number of large homes or condos at the Lake of the Ozarks that I have seen in the past 13 years that were just a little short on their dining and deck seating. Picture yourself arriving to a three bedroom home with your eight guests and you walk into a home that had no dining table and only 3-4 bar stools at the breakfast bar. In this true life situation, I had to persuade the owner of the home that he really needed a table, in addition to his breakfast bar. His family only had four people so it never really crossed his mind that he needed extra seating for his rental guests.

Living Area Seating  

This same thought process should also extend to the living area. You should be able to seat most of your guests in the living area. If you sleep eight then you need to think about seating at least five to six guests in the living area. If your living area doesn’t look inviting and is not able to accommodate the number of guests that could potentially stay in your home or condo, then your potential guest may look for a property that has more seating so that they will be more comfortable.

Deck Seating 

The same goes for the deck. Guests love to relax outside by the water or on a deck overlooking the water. You should have plenty of deck seating, a table and a few lounge chairs that together will seat at least the number of guests that your home or condo will sleep.

Guests like to dine and relax together and you need to ensure that this item has not been overlooked. Having the proper seating arrangements can give you an edge over your competition. 5 Grilling Tips for the Upcoming Holiday Weekend

One of the most popular 4th of July activities is grilling! Whether you're a burger person or favor a nice juicy steak, there's nothing better than getting family and friends together for a nice meal outside. The weather is supposed to be beautiful this weekend and Your Lake Vacation has some tips for a successful meal on the grill:

1. The Perfect Steak. 

How do you know if your steak is cooked to your liking? If you cut it open to check the inside, you're just going to let all those flavorful juices run out. Instead, get a grill thermometer to check the temperature of your meat. Here are the temperatures to determine the degree of doneness:

• Rare - 125° to 130°
• Medium Rare -130° to 140°
• Medium - 140° to 150°
• Medium Well - 150° to 160°
• Well Done - 160° to 170° 

2. A Clean Grill. 

A successful grilling experience starts with a clean grill. The grill is easier to clean when hot, so preheat the grill first and then take the brush to it. To make this step easier next time you go to use the grill, be sure to brush it again after you've cooked this meal. Once you have the grill nice and clean, it's important to oil it up to reduce sticking. The best way to do this is to rub a vegetable oil soaked paper towel on the rack; you don't want to use a spray as it will create large flames.

3. Fresh Meat. 

For the best tasting meat, you should use fresh meat, not frozen. The main issue with frozen meat is that it contains ice crystals. These crystals tear meat cells and lead to more fluid leaking out of the meat when it cooks. The end result is a steak that's more prone to quick oxidation and is less juicy than fresh steak. If frozen is your only choice, make sure to thaw out the meat completely before cooking it. About 20 minutes before grilling, remove meat from the fridge, and let it sit covered so it can get to room temperature.  

4. The Right Seasoning. 

Whether you choose to marinate your meat or sprinkle on some seasoning, the way you season your meat can make or break the meal. Adding flavor can take your meat from good to great! Marinades are flavor infusing liquids that make your meat juicy and delicious. For best results, marinade your meat in the fridge for several hours. And remember, don't baste with a liquid in which raw meat was in during the last 3 minutes of grilling. Another great way to season your meat is to, just before grilling, brush the meat with a little olive oil and rub on your favorite spices.

5. A Hot Grill. 

For best results, you want your grill to be hot! Crank that baby up! About 15 to 25 minutes before you start cooking, you want to preheat your grill. A properly heated grill will sear food on contact, keep the insides moist and help prevent sticking. You want your grill to be at least 450° or hot enough that you can only hold your hand over it for one second.

7 Little Known Facts About Memorial Day

While it may be fun to crank up the BBQ grill for the first time this season and hit the Lake with your boat that's been calling your name since you put it away for winter, it's important to remember the real meaning of Memorial Day Weekend. Many men and women died serving our country so that we would have the freedom to take these long, fun weekends. In honor of the upcoming holiday, the best vacation rental company at Lake of the Ozarks has put together a list of little known facts about Memorial Day:

1. Memorial Day originated following the Civil War. 

Memorial Day was the response to an unprecedented massacre of the Civil War, where nearly 620,000 soldiers from both sides died. The loss of so many lives led to spontaneous commemorations across the country.

2. Memorial Day was originally known as Decoration Day. 

To honor the deceased, soldiers would decorate the graves of the fallen with flowers, flags and wreaths.

3. Memorial Day used to be on May 30 each year. 

In 1971, the date Memorial Day was celebrated on shifted from May 30 to the last Monday in May. The main reason for the shift was the create an extended weekend for the holiday.

4. Memorial Day is a Federal Holiday, not a "National Holiday." 

When first adopted, Memorial Day was a federal holiday and therefore, only applied to federal employees and the District of Columbia. For everyone else, the holiday was enacted by each individual state, starting with New York.

5. On the Thursday before Memorial Day, soldiers visit graves of the fallen in Arlington National Cemetery.

Not only do soldiers from the 3rd infantry visit the graves of the fallen, they place flags at each of the more than 260,000 gravestones at Arlington. They also patrol the cemetery 24 hours a day during the weekend to ensure that each flag remains standing.

6. Waterloo, New York is said to be the birthplace of Memorial Day. 

While Waterloo is most widely recognized as the birthplace of Memorial Day, there's still quite a debate going about it. Other towns, such as Boalsburg, PA, also try to claim the title.

7. In December 2000, a law was passed to have a moment of silence at 3 pm on Memorial Day. 

To ensure the sacrifices of America ’s fallen heroes are never forgotten, the “The National Moment of Remembrance Act” was passed. It encourages all Americans to pause wherever they are at 3 pm local time on Memorial Day for a minute of silence to remember and honor those who have died in service to the nation.

Who Do You Want Managing Your Property?

Professional vs. Amateur

In life there are times when amateurs are equal to or greater than their professional counterparts. For years, the U.S.A. only allowed amateurs to compete in the Olympics - until we finally got beat in basketball. Then we created the "Dream Team" to take back our Olympic pride demolishing every other team in our path.

A young Tiger Woods, as an amateur, was obviously better than most, if not all, of the professional golfers and proved it before and after turning pro. In most sports, you will find that there are those amateurs who are better than their professional counterparts. The same goes for other areas of life.

In many professions, there are good reasons why the government does not allow amateurs to practice in their field without a license or degree. Would you rather visit a licensed doctor or an amateur? Would you rather have a licensed airline pilot or an amateur fly you across the ocean? How about a licensed real estate agent who knows the real estate laws and the market or your neighbor who once sold his own home? 

In most cases, people want a professional who knows what they are doing to help them in an area of expertise. The same is true when it comes to vacation rentals. I have come into contact over the years with amateurs who are able to lure away clients by offering them a lower commission rate for managing their home or condo. Part of the reason that they can offer lower rates is that they don't have a city or county business license, don't have liability insurance or pay workers compensation, they don't have a real estate license or continuing education and usually it is a one or two person team with very low overhead.

While I am all for competition, which I believe makes for a healthy economy and a wider variety of choice, please remember the old saying "buyer beware." What happens when there is damage to your property that is the result of the property manager who doesn't have insurance? Who is collecting and paying your state and lodging taxes? What if there is an injury to an employee of the property manager at your property and they don't carry workers compensation or liability insurance? For these and many other reasons, it is usually wise to seek out a professional vacation rental manager who really knows the market, the laws and has the expertise to properly manage your asset.

A friend of mine once got a job working in the cafeteria at the hospital and when I told my young son that Dave got a job at the hospital, he replied, "What did he get, Doctor?" Soon after we stated calling my friend "Doctor Dave." Think about it - who do you want managing your property?
